We don't use gas ovens. Every strip of SIO char siew is roasted in a custom-built Apollo drum oven using aged lychee wood. The result is a complex, smoky aroma that cannot be replicated.

The marinade is a 48-hour process involving premium soy, rock sugar, and a secret blend of spices passed down through three generations of hawkers, refined for the modern palate.
